Sustainability is woven into the DNA of Coeur Catering & Rooftop Gaston. In 2024, Coeur Catering was also able to cash in on that with the Belgian Gault&Millau Sustainability Catering Award.
"Why" you ask? To actively contribute to a healthy environment for our future generations. Every day we try to minimize our impact and to restore the natural environment. Together with our partners, we can make an even bigger impact. Will you join us?

Why sustainability matters to Rooftop Gaston
No more food waste, disposable packaging and foods that do too much damage. We prefer to say "Never TOO much" to sustainable choices! Together with our team, we make our clients aware of the impact of their culinary choices and inspire them how things can be done differently, better and at least as delicious.
Therefore, since 2018, we have been working with a sustainability plan focused on our core business of connecting people, our planet and good food.
But there is more ... we are not doing this alone: therefore, we also want to activate you to contribute. Or rather, a tree. Or a whole forest!

Sustainable catering

Nutrition
40% of our offerings are resolutely vegetarian and beef is only available upon request. We prefer local and seasonal fruits and vegetables. For fish, we like to stick to a "catch of the day" from the North Sea.

Tap water
Thanks to the social impact company Robinetto, you drink chilled and filtered tap water at Gaston. Both flat and sparkling. So we keep transportation and packaging to a minimum.

Local
To reduce our CO2 emissions from transportation, we work with local suppliers as much as possible. For example, we do not serve (sparkling) wines from New World countries but rather wines of Belgian origin. Our coffee De Draak carries the Rainforest Alliance label and is roasted locally in Ghent.
Waste and zero food waste
Rooftop Gaston wants to reduce plastic and other waste as much as possible and offer smart alternatives or purchase in larger quantities. All our food and beverages are offered in porcelain and glass. Straws we avoid and if that is not possible these are also recyclable.
With years of expertise, Coeur Catering aims to combat food waste in all areas. Thus, the purchase of products meets real demand. Thanks to the optimization of rapid cooling and sustainable storage methods, preparations are given a second life. In the context of
of zero waste, everything is creatively processed and if possible redistributed through FoodSavers.

We're planting trees for a better climate with Go Forest
As a partner and ambassador, we support Go Forest, which works every day against deforestation and the protection of biodiversity in the fight against climate change. By 2030, Coeur Catering plans to work with Go Forest to plant at least 20,000 trees in Madagascar. Join our movement!

We resolutely choose Fairtrade
Fairtrade is the best-known and most trusted sustainable label that makes trade fairer for the people who grow our food. Whenever possible, we at Gaston choose products with this label so that producers in Africa, Asia and South America receive a fair income so they can make a living from their work and invest in a sustainable future.

We are going for the Green Key label in 2026
Those who book a Green Key location can count on the planet to benefit without sacrificing comfort or affordability. Rooftop Gaston is on track to acquire this eco-label by 2026 so that we are also CSRD-proof.
